How the ingredients work:

  • Magnesium and calcium both define water hardness. They control extraction strength, but too much can mute complexity or introduce unwanted flavors. Calcium enhances sweetness and clarity, while magnesium boosts mouthfeel and flavor complexity.

  • Potassium bicarbonate and sodium bicarbonate adjust alkalinity, balancing acidity during brewing. Sodium softens bitterness, especially in darker roasts, while potassium highlights fruit-forward notes in a lively way.
